What is more Summery than cherry pie? Not much. My darling was invited to the Vancouver Opera BBQ recently, as he will be singing for them soon (I AM SO PROUD OF HIM!) We were asked to bring a dessert and I do love any excuse to bake. Most such requests I feel deserve a cake, but a pie was far more travel-friendly. This was my first time with this recipe, but I always trust the Smitten Kitchen to steer me right. The only downside of this dish was that I have no cherry pitter, so it took a looooooooooooooong time to make my way through all of those cherries, and I got crimson stained hands from it. It looked like I had just killed someone.
But the pie was SO good and so gone within minutes that I went and made another a few days later. This time we didn't have to share with everyone else.
I used this recipe for the pie crust. Easiest pie crust ever; it has only three ingredients!
